Hungry Rice; World's Best Tasting Cereal

Wonders of "Acha" ( Hungry Rice)
I am fond of saying as a people and a country called Nigeria, there are two social fabrics that obviously bind us together and Nigerians could be easily identify with. Taking a look back at common social platforms, gatherings or fora. It's evidence to note that whenever food and football take center stage irrespective of the divide, Nigerians unite . For instance, a special kind of processed cassava food items 'garri' is attributed to Nigeria and not India
Food has being one of the instrumentalist nations leverage on to advance their course and identity. Africa with so much of arable lands spanning across the length and breadth of the continent, coupled with enriching climate has not taking the bull by the horn by being innovative, proactive and resourceful, to pitching its tent as food basket of the world arguably.
My very first visit to Plateau State, Nigeria, somewhere in West Africa, will always linger on in my memory. The topography of the villages, their farmlands, the rocks and temperate like weather is quite terrific. Most fascinating was my encounter with this resourceful crop called "Acha". It's popularly known as "hungry rice". This crop is not a stable food among Nigerians as many could not identify with it, except those from the middle belt of the country and mostly diabetic patients
The crop is highly cherish for its multi-versatile uses, nutritional composition and health benefits. Hungry rice is a non sugar grain, look like sesame seeds, though tiny in sizes and tip to be the smallest seeds in all species of millet. It is highly rich in essential amino acid, iron, calcium, magnesium, zinc, and manganese than any other grain. Looking for gluten free, high fibre cereals to spice up your cooking or enrich your meal, hungry rice could be the needed recipe. It is best among grains for those suffering from celiac disease; gluten intolerance and its taste is appealing. Its insulin secreting properties, and high fibre content, make it best food choices recommended by medical practitioners for diabetic
It's fascinating to project that hungry rice in comparison to whole egg is found to contain an appreciable essential amino acids which cannot be produced by the body as nutritional content estimates;
above 90% of threonine,
tryptophan, valine, phenylalanine, lysine (>45%),
methionine (>185%),
 isoleucine (72%),
 lysine (46%)
175% of total sulfur (histidine).
Furthermore the husk of "Acha" contains carbohydrate(>80%), protein(>8%), and fat(4%)
Having being considered for various usage, thank to its organoleptics properties, I was privilege to have it prepared in porridge with stew, couscous with milk, blend with beans instead of rice, in form of local drinks similar to 'kunu' and added as ingredients in traditional cuisine. It can be used to make bread, could be added to flour as fortifying agent, making of cakes and even cookies or snack.
Research proves that "Acha" is the world's best tasting cereals, most nutritious of all grains, fastest growing cereals, reaching maturity as six to eight weeks, potential to boost food security and improve nutrition.
Wondering of which ingredients to enlist to your organic menu list, this crop could be perfect for you as it is still cultivated and traded by family farming compare to other class of grains that have been largely commercialize
